Pound for pound, saffron is still the most valuable spice in the world, coming from the delicate thread-thin red stigmas of the crocus flower. This variety can only be painstakingly hand harvested by a protected farming co-operative in Kozani, western Macedonia, where beautiful purple crocuses carpet the fields every autumn. It is considered one of the best varieties in the world. Called ‘krokos’ in Greek, saffron was one of the most popular spices in the ancient world, valued for its colour, flavour and medicinal properties. It is widely used in both sweet and savoury dishes, adding subtle flavour, perfume and colour. It can also infused as a tea that is high in antioxidants.
