The aroma and taste of lime leaves is floral and citrus-like, but without the acidic notes and much sweeter. Kaffir lime leaves are an important ingredient in Thai cuisine, providing the tangy, citrus perfume found so often in soups, salads, stir-fries and curries. Kaffir lime leaves are also used in Indonesia and Malaysian fish and chicken dishes - you can remove the freeze dried lime leaves before serving, if you wish.

Once opened, Kaffir lime Leaves should be stored in an airtight container as they do lose flavour when exposed to air.
